Tuna-Avo Poke Bowl

Ingredients
  1. 1 cup cooked white rice
  2. 1 tbsp sesame oil
  3. 3 tbsp low-sodium soy sauce
  4. 1 lb sushi-grade tuna, cut into 1-inch cubes
  5. ½ cup zucchini, julienne
  6. ¼ cup shredded carrots
  7. ½ cup edamame, steamed
  8. 2 tbsp fresh lime juice
  9. 2 tbsp shaved shallot
  10. 1 tsp sesame seeds, toasted
  11. ½ Del Monte Hass avocado, cubed
Instructions
  1. Place white rice in the bottom of a serving bowl.
  2. Combine sesame oil, soy sauce and tuna in a small bowl.
  3. Place edamame, carrots, zucchini and avo cubes on rice bed. Pour lime juice over the bowl.
  4. Top the bowl with ½ cup tuna mixture, shaved shallot and sesame seeds. Enjoy!
