Mediterranean Pita Salad
  1. 3 romaine hearts, chopped
  2. 1 Del MonteⓇ Cucumber, peeled, seeded, and chopped
  3. 2 cups Del MonteⓇ Bon Bon Tomatoes, halved
  4. ½ cup crumbled feta
  5. ½ cup pitted Kalamata olives
  6. 2 cups pita chips
  7. ½ cup prepared Greek or Italian dressing
  1. In a large bowl toss together romaine, cucumber, tomatoes, feta, olives, pita chips, and dressing. Serve immediately.
  2. To prepare as a meal preppable lunch salad, toss together all ingredients except dressing and divide among 4 containers. Place dressing (2 tablespoons per serving) in small containers and pack alongside salad.
