Funky Monkey Chocolate Chip Cookies
  1. 1½ cups all-purpose flour
  2. ½ tsp baking soda
  3. ¼ tsp salt
  4. ½ cup unsalted butter, softened
  5. ½ cup peanut butter
  6. ½ cup light brown sugar
  7. 1 large egg
  8. 1 small Del Monte® banana, smashed
  9. 2½ tsp vanilla extract
  10. 1 cup dark chocolate chips
  1. In a medium bowl, combine the first three dry ingredients.
  2. In a separate bowl, combine the butter, peanut butter and light brown sugar. Beat on medium-high speed with a hand mixer.
  3. Add the egg, banana and vanilla extract and mix until combined, scraping the sides of the bowl to incorporate all the ingredients.
  4. Fold in dark chocolate chips with a flat spatula. Cover the bowl with plastic wrap and chill for 30 minutes.
  5. Preheat oven to 350°F and line two baking sheets with parchment paper.
  6. With a medium cookie scoop, scoop spoonfuls of cookie dough onto the baking sheet, about two inches apart.
  7. Bake for 9-10 minutes or until the edges are lightly brown. Allow the cookies to cool before transferring to a wire rack to cool completely. Enjoy!
