Chinese Lettuce Cups
  1. 1 tablespoon preferred vegetable oil
  2. 3 garlic cloves, minced
  3. 1” piece fresh ginger, peeled and minced or grated
  4. 1 pound lean ground pork
  5. 3 tablespoons hoisin sauce
  6. 2 tablespoons soy sauce
  7. 1 tablespoon rice vinegar
  8. 1 teaspoon toasted sesame oil
  9. ½ cup finely diced Del MonteⓇ pineapple
  10. ⅓ cup finely diced canned water chestnuts
  11. 10 butter lettuce leaves
  12. 3 green onions, thinly sliced
  13. ¼ cup finely chopped roasted peanuts
  1. In a large skillet heat oil over medium heat. Add garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Stir in pork and cook, stirring occasionally, until browned, about 8 minutes. Stir in hoisin, soy sauce, vinegar, and sesame oil. Take off the heat and stir in pineapple and water chestnuts.
  2. Lay lettuce leaves on a large platter and divide pork mixture between them. Garnish with green onion and peanuts.
