Banana Protein Pancakes
  1. 2 scoops vanilla protein powder
  2. 1 large very ripe Del Monte® banana
  3. ⅛ tsp cinnamon
  4. ¼ tsp baking powder
  5. ¼ tsp salt
  6. 2 eggs
  1. In two clean bowls, separate the egg yolks from the egg whites. Beat the egg whites on high for two minutes, or until they form soft peaks.
  2. Add the remaining ingredients to the egg yolks and beat until smooth. Gently fold ⅓ of the egg white mixture into the banana mixture until combined. Continue slowly folding in the egg mixture until everything is well combined.
  3. Heat a skillet over low heat. Scoop ¼ cup of the batter onto the skillet and cook for 60-90 seconds on each side.
  4. Top with bananas, honey, or your favorite pancake toppings. Enjoy!
