Banana Bread Donuts
  1. 2 ripe Del Monte® bananas, mashed
  2. 1 large egg
  3. 1/2 cup brown sugar, packed
  4. 1/4 cup granulated sugar
  5. 1/4 cup vegetable oil
  6. 1/4 cup Greek yogurt
  7. 2 teaspoons vanilla
  8. 1 1/4 cups flour
  9. 1/2 teaspoon baking powder
  10. 1/2 teaspoon baking soda
  1. 1/2 cup butter, softened
  2. 2 cups powdered sugar
  3. 1 teaspoon vanilla
  4. 2 tablespoons milk
  1. Preheat oven to 350°F. Spray one 6-count non-stick donut pan with cooking spray.
  2. In a large bowl, add the egg, sugars, oil, Greek yogurt, vanilla, and whisk to combine.
  3. Add the bananas and stir to combine.
  4. Add the flour, baking powder, baking soda, salt, and fold with spatula until combined.
  5. Turn batter out into prepared pans, filling each cavity about 3/4 full.
  6. Dollop the batter into the donut pan with a spoon.
  7. Bake for about 13 to 14 minutes, or until donuts are cooked through.
  8. Remove from oven and allow donuts to cool in the pans while you make the glaze.
  9. Cook the butter over medium heat in a medium saucepan until it’s amber to brown in color, or about 5 minutes.
  10. Turn the heat to medium-low, add the brown sugar, and cook for about 1 minute, stirring nearly continuously.
  11. Remove the pan from the heat, allow it to cool for about 1 minute, and add 3 tablespoons cream, vanilla, and salt. Whisk quickly to combine.
  12. Add the confectioners’ sugar and whisk to combine until the glaze reaches your desired consistency.
  13. Dip each donut in glaze and allow to cool momentarily before digging in!
