Avocado and Pumpkin Harvest Bowl
- 1 Del Monte® Hass Avocado, halved and cut into slices
- ½ cup pumpkin, cut into slices and baked in oven for 30 minutes at 450˚F
- ½ cup spinach
- 1 cup cooked quinoa
- ¼ walnuts
- In a mixing bowl, fill with quinoa.
- Add spinach, avocado and pumpkin on top of quinoa.
- Top with walnuts and dig in!
