Avocado Potato Skins
  1. 2 Del Monte® Fresh Hass Avocados, halved and diced
  2. 2 sweet potatoes, cut into one inch slices
  3. 1 cup black beans
  4. 1 red bell pepper, finely chopped
  5. ½ cup red onion, finely chopped
  6. ½ cup lime juice
  7. ½ tsp. salt
  1. Preheat oven to 400°F
  2. Add avocados into a large mixing bowl and mash until smooth.
  3. Add black beans, red pepper, red onion, lime juice and salt into the mixing bowl and stir until combined.
  4. Place sweet potato slices on large baking sheet for about 30 minutes, flipping once
  5. Let potatoes cool for two minutes.
  6. Scoop a spoonful of guacamole onto each potato and garnish with red onion before serving!
