Ingredients
  1. • Leaf lettuce
  2. • 1.5 cups of tri-color quinoa, cooked
  3. • ½ haas avocado, sliced
  4. • 1 handful of vine tomatoes, quartered
  5. • Parsley
  6. • ½ lime, wedged
  7. • 3 tbsp olive oil
  8. • 2/3 chicken breast, grilled
  9. • ½ tsp Chili Powder
  10. • ½ tsp oregano
Instructions
  1. Soak leaf lettuce in ice cold water for 5 minutes to crisp.
  2. Tear leaves of lettuce into a bowl and top with 1.5 cups of tri-color quinoa, avocado, vine tomatoes, chicken, and a few leaves of parsley.
  3. Squeeze lime over the whole salad and drizzle with olive oil.
  4. Top with chili powder and oregano.
