- • Leaf lettuce
- • 1.5 cups of tri-color quinoa, cooked
- • ½ haas avocado, sliced
- • 1 handful of vine tomatoes, quartered
- • Parsley
- • ½ lime, wedged
- • 3 tbsp olive oil
- • 2/3 chicken breast, grilled
- • ½ tsp Chili Powder
- • ½ tsp oregano
- Soak leaf lettuce in ice cold water for 5 minutes to crisp.
- Tear leaves of lettuce into a bowl and top with 1.5 cups of tri-color quinoa, avocado, vine tomatoes, chicken, and a few leaves of parsley.
- Squeeze lime over the whole salad and drizzle with olive oil.
- Top with chili powder and oregano.
