Pineapple Macarons

Ingredients
  1. 1¾ cup confectioners sugar
  2. 1 cup almond flour
  3. 3 large egg whites, room temperature
  4. ¼ tsp cream of tartar
  5. Pinch of salt
  6. ¼ cup superfine sugar
  7. ½ tsp vanilla extract
  8. 2-3 drops yellow food coloring
  9. Creamy Pineapple Filling
  10. ½ cup Del Monte Gold Extra Sweet Fresh Cut Pineapple
  11. ½ cup softened butter
  12. ½ tsp vanilla extract
  13. 3 cups powdered sugar
Instructions
  1. Make the Cookies
  2. Preheat a convection oven to 300º. Line baking sheets with silicone mats.
  3. Whisk together confectioners sugar and almond flour in a bowl.
  4. Sift the mixture through a fine sieve into a large bowl.
  5. In a separate bowl, beat the egg whites, cream of tartar and salt with a mixer on medium speed until froth forms. Then increase the mixer speed to medium-high; slowly add the superfine sugar and beat until stiff peaks form, about five minutes.
  6. Fold the egg whites mixture into the almond flour and sugar using a rubber spatula. Keep folding until fully incorporated.
  7. Add vanilla extract and food coloring. Continue folding with the spatula until combined.
  8. Transfer the batter to a piping bag with a ¼-inch round tip. Pipe 1¼-inch circles on the silicone mat-lined baking sheet. Tap the baking sheets against the countertop to release any air bubbles in the batter.
  9. Let the cookies sit at room temperature until the tops are no longer sticky, 15 minutes to an hour.
  10. Bake the cookies about 20 minutes, or until they are shiny and rise about ⅛-inch. Allow the cookies to cool completely before peeling off the silicone mats.
  11. Make the Filling
  12. Place Del Monte Gold Extra Sweet Fresh Cut Pineapple in a blender and pulse until fully crushed. Drain fruit using cheesecloth, saving juice for later.
  13. In a large bowl, beat butter with an electric mixer until creamed.
  14. Add drained pineapple and vanilla extract. Beat until combined.
  15. Beat in powdered sugar, adding ¼ cup at a time.
  16. Add 1-2 tbsp reserved pineapple juice and blend until filling is smooth.
  17. Place filling in a piping bag. Pipe frosting onto the flat side of a cookie. Top with another cookie to make the sandwich!
