Grilled Tomato and Mozzarella Pizza
  1. 2 medium Del Monte® tomatoes, sliced
  2. 2 large whole wheat pitas
  3. ¾ cup part-skim mozzarella cheese, shredded
  4. ½ cup fresh spinach
  5. 5 fresh basil leaves, chopped
  6. 2 tbsp extra virgin olive oil
  7. Garlic powder
  8. Salt and Pepper, to taste
  1. Brush olive oil on both sides of pita and sprinkle with garlic powder.
  2. Place on grill over medium to low heat.
  3. Distribute tomato slices and spinach over each pita.
  4. Sprinkle with salt and pepper.
  5. Add crushed basil leaves and top with cheese last.
  6. Cover and grill for 2-3 minutes, or until cheese is melted.
