Chilled Melon Soup
  1. 1 large Del Monte® cantaloupe cut into small cubes (4-6 cups)
  2. 2 tbsp. honey, or to taste
  3. Juice of 3 limes, or to taste
  4. Pinch of cardamon
  5. Sliced fresh strawberries for garnish
  6. 1/4 cup whole fresh mint leaves
  1. Fill a wide, shallow container with cantaloupe and place in microwave.
  2. Cook at 50 percent power for 2 minutes, or just until melon softens slightly.
  3. Transfer cantaloupe to a blender or food processor.
  4. Add honey, lime juice and cardamon, and blend until smooth.
  5. Refrigerate until cold.
  6. Before serving, taste and adjust seasoning if necessary with more honey, cardamon and/or limejuice.
  7. Garnish with strawberry slices and mint leaves.
