Cantaloupe and Chicken Salad with Yogurt Dressing
Serves 4
  1. 1 medium Del Monte® cantaloupe, cut into thin wedges with the peel cut off.
  2. ½ head of lettuce
  3. 2 cups pre cooked chicken, diced
  4. 5 tbsp vanilla low-fat yogurt
  5. 5 tbsp Italian dressing (can us reduced or low fat)
  6. 8 tbsp slivered Del Monte® red onions
  7. 4 tbsp walnut pieces
  8. 4 tbsp dried cranberries
  1. In a large bowl, combine chicken, yogurt, dressing, red onions, walnut and dried cranberries.
  2. Serve over lettuce and cantaloupe.
