Beet and Sweet Potato Latkes
  1. • 1 package of sweet potato noodles
  2. • 1 package of beet noodles
  3. • ½ cup of kimchi
  4. • ½ cup of flour
  5. • 2 eggs
  6. • ½ tsp salt
  7. • 4 tbsp olive oil
  1. • 1/3 cup Greek yogurt
  2. • Chopped scallions
  1. Squeeze as much water as possible out of the beet and sweet potato noodles.
  2. Mix the beet and sweet potato noodles with the kimchi, flour, eggs, and salt in a large bowl.
  3. Form 2.5” round patties. Set aside.
  4. Heat olive oil in a frying pan over medium heat.
  5. Place 4 patties in the frying pan at one time and fry for 4-5 minutes on each side until crispy.
  6. When the latkes are done, place them on a wire rack to cool slightly. When you’re ready to serve, top with a dollop of Greek yogurt on each latke and a sprinkle with chopped scallions.
