Beet and Sweet Potato Latkes
- • 1 package of sweet potato noodles
- • 1 package of beet noodles
- • ½ cup of kimchi
- • ½ cup of flour
- • 2 eggs
- • ½ tsp salt
- • 4 tbsp olive oil
- • 1/3 cup Greek yogurt
- • Chopped scallions
- Squeeze as much water as possible out of the beet and sweet potato noodles.
- Mix the beet and sweet potato noodles with the kimchi, flour, eggs, and salt in a large bowl.
- Form 2.5” round patties. Set aside.
- Heat olive oil in a frying pan over medium heat.
- Place 4 patties in the frying pan at one time and fry for 4-5 minutes on each side until crispy.
- When the latkes are done, place them on a wire rack to cool slightly. When you’re ready to serve, top with a dollop of Greek yogurt on each latke and a sprinkle with chopped scallions.
