Blackened Shrimp Pineapple Salad
  1. 8 large shrimp, peeled and deveined
  2. 1 Del Monte Gold® Extra Sweet Pineapple, cut in chunks
  3. 1/2 Del Monte® red pepper, cut in thin slices
  4. ¼ cup corn
  5. 1 tablespoons unsalted butter
  6. 2 tsp. blackening seasoning
  7. 2 cups Romaine Lettuce
  8. Salt and Pepper
  9. Choice of dressing
  1. Rub and coat shrimp with blackening seasoning.
  2. In a pan, heat butter and sauté shrimp.
  3. Cook about 7 minutes on each side.
  4. Remove from heat and set on a paper towel covered plate to cool.
  5. In a bowl, combine the remaining ingredients and top with shrimp.
