Mediterranean Chickpea and Zucchini Noodle Salad

Ingredients
  1. 1 pkg (12 oz) Del Monte® Zucchini Noodles
  2. 1/3 cup olive oil
  3. 3 tbsp lemon juice
  4. 1 clove garlic, minced
  5. 1/2 tsp salt
  6. 1/4 tsp pepper
  7. 1/4 cup chopped fresh basil
  8. 1 can (19 oz) canned chickpeas, drained and rinsed
  9. 1 cup halved cherry tomatoes
  10. 1/2 cup pitted black olives
  11. 1/3 cup finely crumbled feta cheese
Instructions
  1. In large bowl, whisk together oil, lemon juice, garlic, salt and pepper; stir in basil. Toss with zucchini noodles until well coated.
  2. Add chickpeas, tomatoes and black olives; toss well. Garnish with feta cheese. Serve immediately.
Notes
  1. TIP: Substitute beans or lentils for chickpeas if desired.
