Mediterranean Chickpea and Zucchini Noodle Salad
- 1 pkg (12 oz) Del Monte® Zucchini Noodles
- 1/3 cup olive oil
- 3 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup chopped fresh basil
- 1 can (19 oz) canned chickpeas, drained and rinsed
- 1 cup halved cherry tomatoes
- 1/2 cup pitted black olives
- 1/3 cup finely crumbled feta cheese
- In large bowl, whisk together oil, lemon juice, garlic, salt and pepper; stir in basil. Toss with zucchini noodles until well coated.
- Add chickpeas, tomatoes and black olives; toss well. Garnish with feta cheese. Serve immediately.
- TIP: Substitute beans or lentils for chickpeas if desired.
