Loaded Tostones

Ingredients
  1. 3 Del Monte plantains
  2. 2 Del Monte Hass avocados, halved and diced
  3. 1 tbsp lime juice
  4. Vegetable oil
  5. 2 cups queso de freir, cut into 1½ -inch cubes
  6. ½ cup of corn starch
  7. Salt and pepper, to taste
Instructions
  1. Heat vegetable oil over medium heat in a frying pan.
  2. Tostones
  3. Peel the plantains and cut them into 1-inch slices. Fry the slices in preheated oil until lightly browned.
  4. Remove the plantains from the oil and use a glass to smash them nearly flat.
  5. Re-fry until golden brown. Season with salt and pepper to taste. Set aside.
  6. Queso Frito
  7. In a large bowl, coat queso cubes with corn starch.
  8. Carefully fry cubes in the hot oil until brown, then turn over and fry the other side. Once the cubes are golden brown, remove from oil and set aside.
  9. Avocado Mash
  10. In a medium bowl, mash avocado cubes with a fork.
  11. Add lime juice and combine.
  12. Place a dollop of mashed avocado on each toston, then top with queso frito!
