Fresh Thai Mango Salad

Ingredients
  1. 1 pkg (1 lb) Del Monte® Fresh Cut Mango Spears, cut into matchsticks
  2. 2 tbsp rice wine vinegar
  3. 2 tbsp lime juice
  4. 1 tbsp fish sauce
  5. 1 tbsp brown sugar
  6. 1 tbsp sriracha hot sauce
  7. 1 red pepper, sliced
  8. 1/3 cup thinly sliced red onion
  9. 1 cup bean sprouts
  10. 1/4 cup crushed peanuts
  11. 2 tbsp chopped fresh cilantro
Instructions
  1. In large bowl, whisk together vinegar, lime juice, fish sauce, brown sugar and hot sauce; toss with mango, red pepper and onion until combined.
  2. Transfer to serving dish. Top with bean sprouts, peanuts and cilantro.
Notes
  1. • Serve with grilled shrimp or chicken if desired.
  2. • Substitute cashews for peanuts if desired.
