Ingredients
  1. 1 pkg (12 oz) Del Monte® Butternut Squash Noodles
  2. 1/2 cup plain Greek yogurt
  3. 1 tbsp lemon juice
  4. 1 tbsp cider vinegar
  5. 1 tsp Dijon mustard
  6. 1 tsp honey
  7. 1/4 tsp each salt and pepper
  8. 3 tbsp olive oil
  9. 2 tbsp each chopped fresh parsley and dill
  10. 1 pkg (14 oz) coleslaw mix
Instructions
  1. Whisk together yogurt, lemon juice, cider vinegar, mustard, honey, salt and pepper; whisk in olive oil. Stir in parsley and dill.
  2. Toss squash noodles with coleslaw mix. Pour dressing over top and toss to coat. Refrigerate for 2 hours before serving.
Notes
  1. • Add grilled sliced chicken to salad if desired.
  2. • Serve with chicken, brisket or pulled pork for a great side dish
