Avocado and Pumpkin Harvest Bowl

Ingredients
  1. 1 Del Monte® Hass Avocado, halved and cut into slices
  2. ½ cup pumpkin, cut into slices and baked in oven for 30 minutes at 450˚F
  3. ½ cup spinach
  4. 1 cup cooked quinoa
  5. ¼ walnuts
Instructions
  1. In a mixing bowl, fill with quinoa.
  2. Add spinach, avocado and pumpkin on top of quinoa.
  3. Top with walnuts and dig in!
