Avocado Egg Flatbread
  1. 1 Del Monte® Hass avocado, halved and cut into slices
  2. 1 Del Monte® tomato, cut into small slices
  3. 1 whole wheat flatbread
  4. 1 tbs. Olive oil
  5. 1 teaspoon red pepper flakes
  6. 2 eggs, fried over easy
  7. salt and pepper to taste
  1. Preheat oven to 375°F.
  2. Place flatbread on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Bake for 8-10 minutes.
  4. While it’s cooking, mash the avocado and red pepper flakes.
  5. Once the flatbread has baked, spread mashed avocado over it almost to the edges. Top with sliced tomatoes and fried eggs.
  6. Top with salt and pepper if desired and serve warm!
