1 cup cooked brown rice or couscous
6 oz package of Del Monte® baby spinach
1 cup reduced fat feta cheese, crumbled
½ cup black olives, chopped
½ cup Del Monte® red onion
4 large ripe Del Monte® tomatoes
¾ cup greek dressing, divided |

Sauté onions over medium heat with ½ cup Greek dressing. Add freshly cooked rice and stir in feta cheese. Mix in spinach, cover, and simmer for 1 min or until spinach wilts. Stir occasionally. After spinach wilts, add in remaining ¼ cup dressing and diced olives. Stir until all ingredients are mixed evenly. Remove from heat. In the meantime, slice off top of the tomatoes; gently scoop out centers. Stuff tomatoes with skillet mixture and enjoy! |
