Ingredients for Black Bean & Pineapple Salad Ole Recipe

3 tablespoons fresh squeezed Del Monte®  lime juice
3 tablespoons apricot preserves
1 tablespoons light olive oil
2 cans (15 oz. each) black beans rinsed and drained
2 cups DEL MONTE GOLD® EXTRA SWEET PINEAPPLE chunks
2 medium Del Monte®ears of corn, cooked and kernels cut from cobs (about 1 ½ cups)
1/3 cup sliced roasted red bell pepper
1/3 cup diagonally sliced Del Monte®green onions
1/3 cup chopped fresh cilantro
1 to 2 teaspoon minced Del Monte® jalapeno pepper (optional)

Directions for Black Bean & Pineapple Salad Ole Recipe

To make dressing, in small bowl whisk together lime juice, preserves and oil.
In large bowl, combine remaining ingredients. Add dressing; toss well. Chill 2 to 3 hours to blend flavors before serving.
