Fresh Cantaloupe Salad

Ingredients
  1. 1 small Del Monte Fresh cantaloupe melon
  2. 9 tsp. balsamic vinegar
  3. 9 tbsp. olive oil
  4. 12 halved baby plum tomatoes
  5. 2 balls of mozzarella
  6. Small bunch of basil with leaves picked
  7. Small bunch of mint with leaves picked
Instructions
  1. Cut your Del Monte Fresh melon in half, remove seeds, skin and discard. Cut the fruit into crescent shapes. Sprinkle the melon with a dash of salt to remove excess water. Set aside to drain on paper towel. Cook the balsamic vinegar in a small pan on a low heat for about 5 minutes until syrupy. Set aside to cool.
  2. Heat a grill pan. Dry the melon with a paper towel, then brush with a little oil. Grill the melon on both sides until char lines appear, or about 2 minutes on each side.
  3. Distribute the melon between 2 plates, add the tomato halves and mozzarella. Sprinkle with the herbs, and drizzle with olive oil and balsamic vinegar.
